Time to bake!
Once I had worked out how to use the system on the workshop app the format was easy to use. I eagerly awaited each unit to be released each week to then be able to watch the video and learn a lot of new and different techniques. Having a mentor was really beneficial and my mentor was always really responsive, positive, helpful and constructive. If a bake hadn't gone well, she made suggestions on what to do next time and always found some positives. I learned so much not only about techniques of bread making and patisserie, also about history of some bakes, decoration and why some of the bakes didn't go well so that I could learn from any mistakes. For me, it was also helpful seeing others bakes and interacting with the 'class'. I suppose for a course like this, you will only get out of it what you put in - I loved it so I will recommend it wholeheartedly.

Chefs Skills Review
I work as a chef but have no formal training, so took the course to develop my skills and apply them in the work place. The course description says it’s aimed at highly experienced people, but I found that I already knew most of what was covered in the course. The things that I didn’t know were useful to learn, but I feel a little bit misled by the information provided about who the course is aimed at, and therefore disappointed that the money I invested feels somewhat wasted. It felt like a course for home cooks wanting to progress, and I therefore found that I actually engaged less with the content because I didn’t feel like I was learning. All of the instructors were really good, and I’m not criticising the course itself. But just as helpful feedback, I would definitely have considered a different course with Leith’s if I had had a more accurate understanding of the level of experience this course is aimed at.

I signed up to a “so called”…
I signed up to a “so called” professional bread and patisserie course at significant expense with Leiths. On the whole it’s not patisserie and has a greater focus on what I’d describe as housewife cakes and sweet treats (chocolate cake, brownies, muffins not Paris Brest, Mille Feuille, Caneles etc) On the whole these are laden with absurd amounts of sugar and lack the delicacy and finesse of genuine French patisserie. There is no flexibility or provision for healthier options and requests to that end are dismissed. I feel that my money has been wasted and I’ve not learned any patisserie skills at all only how to make sugar laden cakes. While I would never expect Patisserie or bread to be viewed as a healthy option I’m shocked that Leith’s feel no responsibility for allowing people to make smarter choices with regard to the use of fats and sugar.

The videos were clear and easy to follow. The chef spoke at a good level for my son to enjoy her instruction. The feedback was good. Shame there wasn’t any more interaction. I’m wondering now about what to do with the recipes. It would be nice for Leith School to provide a compilation of recipes with the photos in a recipe book for the students.

Course exceeded my expectations
I wasn’t sure what to expect from an online cooking course. As a Leith’s course I knew it would be of high quality but it exceeded my expectations. The course is delivered very well through the Workshop app with videos and printable resources to keep. I had very good interactions with my mentor Belinda. All in all very professional and brilliant if you aren’t able to attend in person. I’m now looking for another course to do!

Cooking along with the chefs
Cooking along with the chefs makes cooking hard things easy. Everything tastes great. If you could make it more seasonal by adding/subtracting videos accordingly it would make the user’s life a lot more simple when sourcing ingredients or eating to the current outside temperature.

Easy to follow and so useful
I was impressed with the easy to follow videos for the cooking tutorials. Watching the professional chefs doing the demos was so useful - I picked up so many tips on presentation, knife skills and food preparation that I wasn’t expecting.
The theory was really interesting too. So informative and useful! I hope I retain and use this knowledge long after I’ve completed the course.

My vegan journey …
I wanted to take part in this Vegan cooking course to find out how to cook exciting and new recipes by using new ingredients and techniques that I haven’t used before. I am not a vegan but most recipes were so incredibly tasty that I reduced or not eaten meat much during the six weeks of the course. I am now a converted cook who will use these recipes again and again!

Leiths Online Courses
I have done 3 of the Leiths online courses and I have absolutely loved every one. I work as a private chef in Spain and although I have been cooking for a number of years, I had no formal training when I started. The Leiths Essentials and Chefs Skills courses take you on a journey of skill learning which is challenging but in a very supportive environment. The courses are structured in such a way that you almost don´t realize how much you are being tested as you move through the weeks. The videos are excellent and you really feel as if you are in the kitchen with the teacher. I also loved that there are different teachers for different specialities all with their own personalities of course and you get to have your favourites and then these very same teachers are the ones giving you feedback. You are also part of a class or cohort who you can share photos and messages with and it really feels like you are in something special together.
At the end of the course you get a certificate of completion and then you may be invited to take part in an accreditation weekend which absolutely terrified me but which turned out to be the best part of the course. For a start you get to meet the teachers in person and these same teachers from the videos also give you live demonstrations in the ACTUAL LEITHS KITCHENS which for me was almost akin to being on a film set and then you get to cook in the ACTUAL LEITHS KITCHENS which is basically your chance to do your masterchef moment and cooking doesn´t get better than that. You also get to sit down around a long table and eat yummy food with all your class mates and we had an amazing wine demonstration too which taught us all about wine pairing.
Bascially if you love food and want to learn more about how to prepare it for yourself and other people then Leiths is your spiritual home and I can´t recomend the experience highly enough. You will laugh, probably shed a few tears and then come through it triumphant having learned an awful lot.

Excellent course, expensive but very well worth it!
This course uses instructional videos to teach you the patisserie skills. The videos are excellent. You prepare and make the dishes alongside the tutor. Every stage is shown, so you can see how yours looks and compare it to the tutor's. You can also see photos of the items made by the other people on your course. (There were 7-8 people on my course) It's really helpful to see what others have done, and you learn a lot from them. The course runs over 12 weeks, and to complete it in that time scale, you need to allow about 1-2 days per week. You do have access to the videos for 9 months though, and the documents accompanying each section build up a into thick portfolio of theory, recipes and techniques. You need a LOT of ingredients and kit, some of it quite specialised, so be prepared for the extra cost of all this over and above the cost of the course. You also make a LOT of cakes, so it's useful to think about who you can get to help you eat them! Once you make an item, you photograph the finished product and upload it to the Workshop App using the link given at each section. You can add some text, perhaps commenting on the process, or asking a question. The course mentor will reply usually that day, via the App, to give you feedback, tips, or answers. The replies are very positive and very helpful. I felt my confidence grow considerably over the course as I learned many new techniques and tips. At the end of the course, when you have completed all the sections you get a certificate sent automatically to you. The various sections are released weekly and I found it helpful to do them in order, as the later sections built on previously taught skills. Altogether, I am SO glad I did this course. It has taught me so much.
Learnt such a lot with Leiths
I have now done several courses with Leiths Online both accredited and special interest over the last 3 years. Ive always learnt such a huge amount from each of the courses. They are easy to follow and well presented and the personal feedback you receive from both your mentor and fellow classmates is invaluable. I would recommend the courses to anyone either wanting to start up working in the industry or keen home cooks who want to expand their knowledge.
