As taste dictates, many people enjoy placing the caviar atop the blini while it is still warm and eating it almost immediately, while others prefer to let the blini cool and then place caviar (and perhaps creme fraiche) atop the blini. If you've ever made these from scratch you know what a pain they are. These blini don't have too much flavor that it overpowers the caviar. Just what one wants, right?
French blini are not the same as those served in Russia. Russian blini are crepe-like and taste better. And they’re served with a cream that tastes better than sour cream or crème fraiche. If you somehow are able to offer what’s served in Russia, you’d be 5 star.
